Order orecchiette with cime di rapa, handmade and dressed simply with olive oil pressed just outside town. Try capocollo di Martina Franca, the local cured meat the region is famous for, sliced thin and served with fresh bread and a glass of Primitivo or Negroamaro.

In the evenings, restaurants fill the piazzas and quiet streets. Tables glow under warm lights. Waiters greet regulars by name. Service feels personal, attentive, and never rushed.

You can enjoy a beautiful three-course meal with local wine for far less than you would pay in larger Italian cities. The quality is often better. The atmosphere is always authentic.
